Onthe trail of a couple of hares

The killing fields

Hang it high but not until it is high save the blood that drips out of its mouth and nose (I do hope that it blew it before it was shot)

Next it is onto the block with him

Then paunch it

slit through its fur but don't puncture its belly cavity

Now open up its belly to reveal its stomach and guts

Now be a good gentleman and take the ladies coat (or gentlemans) off.

Turn her round and peel it down the legs and up to her neck

And with one quick chop with the cleaver thats her ready to be butchered

The hare portioned ready for the vacuuming and then freezing, but first check over the liver and lungs for signs of disease and/or parasites
